Domori Chocolate
Domori has been making bean to bar chocolate since 1997 and is known for its extraordinarily smooth texture and unique silky mouthfeel.
Their chocolate is made using only two ingredients: fine cocoa beans and cane sugar - with no added cocoa butter and no emulsifiers - relying solely on what's naturally present in the cocoa bean. They roast their beans at low temperatures to preserve delicate flavour notes and use a ball mill instead of a traditional conche, which allows for ultra-fine texture while maintaining the bean's character.
Domori's work with Criollo cacao is particularly noteworthy. In 2002 they invested in the renowned San Jose farm in Venezuela, preserving six rare Criollo varieties now used in their exquisite bars.
