Friis Holm Tasting Set - Chuno 70%
Mikkel Friis-Holm is a bit of an artisan chocolate maker, he likes to experiment with his chocolate, using different methods during the manufacturing process to show how different chocolate can be even when using the one bean.
Chuno beans are an old heirloom variety found in isolated farms in Northern Nicaragua, at altitudes 300m-800m above sea level.
One of three paired bars showcasing how differing handling processes affect the final flavour, the Chuno 70% bars focus on the turning of the beans during the 5 day drying process.
- The Chuno Double Turned bar uses cocoa beans that were turned the typical 2 times during the drying process, leading to a good acidity. Notes of citrus and black olives.
- The Chuno Triple Turned bar uses cocoa beans that were turned an extra time during the drying process, giving a much more smooth and gentle chocolate, with defined acidity.
