This simply beautiful dark chocolate creation is full of the best quality smooth Valrhona dark chocolate, perfectly complemented with aromas of mulled wine and spices such as cinnamon and sugar to create the most deliciously rich festive chocolate treat imaginable... truly Divine!

Serves: 9-12 depending on thickness.

Ingredients:

  • 100g of dark chocolate

We used Valrhona 70% Guanaja dark chocolate for baking, and we could not recommend this more! The intense aromas of this luxury chocolate give the brownies their extraordinary flavour. Buy online at our website: Buy Now

  • 50g Cocoa powder – we used Valrhona 100% pure Cocoa powder.

  • 100ml red wine
  • Pinch of nutmeg & ground cloves
  • ¼ teaspoon each of cinnamon & ginger.
  • 100g flour
  • 150g unsalted butter
  • 200g light brown sugar
  • 1 large egg & 1 egg yolk
  • Optional: Walnuts, cranberries.

Method:

  1. Heat the oven to 180 Fan/ 160 Gas.
  2. Line the base of a baking tin with non-stick baking paper.
  3. Mix the flour, Cocoa powder, spices and a pinch of salt together in a bowl and set aside
  4. Using an electric whisk – beat the butter and sugar together until super light and fluffy before whisking in the egg and yolk
  5. Melt the chocolate in a heat-proof bowl over a pan of simmering water
  6. Add the melted dark chocolate, red wine and flour mixture to the butter and sugar and whisk until a smooth mousse-like texture is obtained.
  7. Pour the batter into the baking tin and smooth into flat rectangular shape – maintain a degree of thickness to give the brownies their delicious gooey centre.
  8. Bake for 15 minutes until just set. The brownies are ready when a fork stuck into the centre comes out clean.
    NOTE: Do not be concerned if brownies are slightly wobbly and soft in the centre, they will firm up and set as they cool to give the perfect moist and rich texture. Avoid any further baking time as this will just dry out the brownies.
  9. Dust the brownies with icing sugar before cutting into squares.
  10. Set to cool in the fridge.

Serve with fresh strawberries and ice-cream
