Pralus

Francois Pralus is a French chocolatier making fine chocolate that is really exceptional.  While he owns a plantation in Madagascar, he makes his chocolate using several different varieties of cocoa bean from around the world throughout the cocoa growing belt - The Ghana bar is made with Forastero; the Peru bar is made using Trinitario beans;  the Madagascan origin bars are made with Criollo beans while their Fortissima 80% is a blend.  All are outstanding.  Their Chuao is probably one of our all time favourite tastes.
